6 cups water
2 tsp salt
1 1/2 cups quick grits
3 eggs, beaten
Dash of hot sauce
1 Tbsp garlic salt
3/4 cup margarine
2 cups shredded cheddar cheese
Sprinkle of paprika
Stir grits into saucepan of rapidly boiling salted water. Cover. Reduce
heat, and cook 5 minutes, stirring occasionally. Combine eggs, hot
sauce, and garlic salt. Add a small amount of hot grits to egg mixture,
stirring well. Stir egg mixture into remaining grits. Stir in margarine
and cheese until melted. Spoon mixture into a well-greased 3 qt.
casserole. Garnish with paprika. Bake at 350 degrees for 25-30
minutes. 10 servings
(We would put this in the oven on Christmas morning before doing gifts)
